Ingredients:
- Potatoes -3 (boiled and peeled)
- Tomatoes - 1 big to 2 medium (pureed)
- Fresh methi leaves -1 cup
- Onion -1 chopped
- Ginger garlic paste -1 tsp
- Asafoetida - a pinch
- Red chilli powder - 1 tsp
- Turmeric powder -1/4 tsp
- Coriander powder - 1/2 tsp
- Fennel powder -1/2 tsp
- Bay leaf - 1
- Garam masala powder - 1 tsp
- Salt to taste
- Oil - 1 to 2 tbsp
- Dry methi leaves - 1 to 2 tsp -optional ( if added gives good taste and aroma)
Preparation:
- Boil the potatoes and peel them. cut into cubes and set aside.
- Add little salt and sugar to methi leaves and set aside for 5 mins. Squeeze and set aside.
- In a kadai add oil. Add bay leaf, asafoetida, onion, ginger garlic paste and fennel powder and fry till onion is slight brown.
- Add the red chilli, turmeric and coriander powder and t1 tbsp water and fry the masala well.
- Add the tomato puree and cook till the raw smell is gone.
- Add potatoes and methi leaves. Add salt and adjust the taste. Mix well.
- Finally add the garam masala, dry methi leaves, mix and serve.
